I found out yesterday that I am lactose intolerant. Looks like I am going to have to explore the wonderful (said with mock enthusiasm) world of soy. Yippee! If anyone has any advice or yummy dairy replacements they’d like to share please do!
Yesterday the kids and I made Lefse. It is a Norwegian flatbread. It is really yummy but kind of a pain to make. The recipe that we used is below.
Here are a few pics of our fun, messy, memorable, lefse experience:
Ingredients:
- 3 cups instant mashed potatoes
- 1 teaspoon salt
- 1/4 cup butter
- 1 cup milk
- 1 cup flour
Directions:
Melt butter and salt in 1 cup boiling water. Pour mixture over instant potatoes and stir . Add 1 cup milk and 1 cup flour; stir together, then cool in refrigerator. Roll into golf ball size balls, then roll out thin. Cook in hot griddle. Brown lightly on both sides.












Oh Oh Oh! I was tag surfing and found lefse! I’m 100% Norwegian and Lefse was a staple in our house growing up. The best lefse is right off the griddle still warm with melted butter. mmmmmm… Thanks for the pictures. I need to do this with my girls!

I wish I had read this sooner because I too am lactose intolerant, and it totally snuck up on me :/ It’s been about a year now (and it DOES come and go) but there’s one thing you have to try, its called Dairy Ease. It’s actual milk but with no lactose and it tastes AMAZING. Some of the grocery stores by me don’t have it, but some do.. http://www.dairyease.com/
It’s sooo good, I actually like it better than regular milk. I tried so long to get into the soy milks but I just couldn’t do it

Thanks for your comment! I actually have tried soy ice cream and it just doesn’t cut it :/ But I was looking up some dairy-free ice cream recipes and I don’t see why you couldn’t just substitute Dairy Ease for the soy products.. technically it should work! I think I’m gonna try it too, I miss my ice cream lol! Here’s some dairy free ice cream recipes:
